Melt In Your Mouth Gluten-Free Mint Chip Cookies
These cookies really do live up to their name. They're chewy, delicious, and super easy to bake! My favorite part is every bite is guaranteed to have chocolate!

Servings: 18 cookies
- ½ cup salted butter
- ¾ cup brown sugar
- ½ cup white sugar
- 2 eggs
- ⅛ tsp peppermint extract
- 1 tsp baking soda
- 1 tsp baking powder
- 2 cups gluten-free flour
- 1 cup andes creme de menthe baking chips
- 1/2 cup chopped dark chocolate
Preheat oven to 350° F.
Use a hand mixer to beat butter, sugar, and eggs on high until creamy and well combined.
Fold in dry ingredients using a spatula.
Stir in mint chocolate baking chips and chopped dark chocolate.
Let dough chill for 1 hour in the fridge.
Line a baking sheet with parchment paper. Roll cookie dough into 2 tbsp balls, and place on tray.
Bake for 12-14 minutes. Let cool completely before removing from baking sheet.
