Prepare gluten-free brownie mix of your choice according to directions.
Bake brownies for approximately 30 minutes or as your mix directs.
Remove from oven and let cool completely. When cooled, crumble brownies completely.
Microwave andes mints, stirring until fully melted.
Pour melted andes mints over brownie crumbles, and use your hands to fully mix together.
Roll into 1 tbsp balls, and place in fridge for 15 minutes to set.
Melt dark chocolate chips in microwave until fully melted. Repeat with white chocolate chips. Add green food coloring to white chocolate until desired mint color is reached.
Remove brownie truffles from fridge, and submerge in melted dark chocolate. Let dark chocolate harden.
Drizzle on mint colored chocolate, and press on andes baking chips to decorate.
