Covered in melted chocolate and minty candy, these gluten-free brownie truffles are a treat you don’t want to miss! I love making them during the holiday season, but they can be enjoyed any time of the year. With only seven ingredients, (most of which can likely be found in your pantry!), this will quickly become one of your favorite recipes. It’s so easy AND delicious! The two main ingredients in this recipe are gluten-free brownie mix and andes mints. All you have to do is bake the brownies according to the directions on the mix, mash them up, and mix them together with a box of melted andes mints. Then after you roll the brownies into balls, dip them in melted dark chocolate and decorate them to your liking! I like using green food coloring to make mint-colored white chocolate to drizzle on top of the truffles. However, you can decorate these whatever way you like and can even customize them for different holidays or celebrations!
What You Need to Make Gluten-Free Mint Chocolate Brownie Truffles
- Gluten-free brownie mix: Any brand works because you are going to mash it up! If you’re looking for allergy-friendly brownie mix, some of my favorites are Kate’s Safe & Sweet, Fun For All Foods, and King Arthur Baking.
- Andes Mints: Did you know andes mints are made in a dedicated nut and gluten-free facility? So cool, right!?
- Dark chocolate chips: I love using Guittard chocolate chips in my recipes because all their chocolate is nut-free.
- Melted coconut oil: Any brand works!
- White chocolate chips: These are also Guittard chocolate chips.
- Green food coloring: You only need 2-3 drops of food coloring to get the perfect mint color!
- Andes creme de menthe baking chips: If you can’t find these, you can just chop up any extra andes mints!

Easy Gluten-Free Mint Chocolate Brownie Truffles
Ingredients
- 1 box gluten-free brownie mix (prepared according to directions)
- 1 box andes mints
- 1 cup dark chocolate chips
- 2 tbsp melted coconut oil
- ½ cup white chocolate chips
- 3 drops green food coloring
- ¼ cup andes creme de menthe baking chips
Instructions
- Prepare gluten-free brownie mix of your choice according to directions.
- Bake brownies for approximately 30 minutes or as your mix directs.
- Remove from oven and let cool completely. When cooled, crumble brownies completely.
- Microwave andes mints, stirring until fully melted.
- Pour melted andes mints over brownie crumbles, and use your hands to fully mix together.
- Roll into 1 tbsp balls, and place in fridge for 15 minutes to set.
- Melt dark chocolate chips in microwave until fully melted. Repeat with white chocolate chips. Add green food coloring to white chocolate until desired mint color is reached.
- Remove brownie truffles from fridge, and submerge in melted dark chocolate. Let dark chocolate harden.
- Drizzle on mint colored chocolate, and press on andes baking chips to decorate.
