One of my family’s annual holiday traditions is making monkey bread every Christmas morning after opening presents! We’ve experimented with lots of different recipes in the last six years of gluten-free baking and have had a variety of results. However, this year we had the fantastic idea of using cinnamon churro Brazi Bites as a starter. This gluten-free monkey bread recipe is super easy to make, and might just be the tastiest version yet! First, let the Brazi Bites defrost slightly on the counter. Second, push them together in a baking dish, so the edges of the bites are touching. Third, mix together the melted butter, sugar, and spices, and pour the mixture over bites. Lastly, put them in the oven to bake! The prep time for the monkey bread is less than 5 minutes, so you can quickly pop it in the oven and return to your festive Christmas morning activities! This recipe is also perfect for a late breakfast or weekend brunch any time of the year!
What You Need to Make Easy Gluten-Free Christmas Morning Monkey Bread
- Cinnamon Churro Brazi Bites: This is one of my favorite allergy-friendly brands! Their products are produced in a facility free of peanuts, tree nuts, and gluten, and they’re delicious! Furthermore, they have a wide variety of bites flavors! The cinnamon churro is my favorite and makes the best monkey bread!
- Butter: Microwave your butter on 20 second intervals to ensure it’s fully melted.
- Brown sugar: You can use either regular brown sugar or light brown sugar. Both work great!
- Cinnamon: Add as much or as little as you like.
- Nutmeg: Adding nutmeg helps balance out the cinnamon and gives the monkey bread a great taste!
- Powdered sugar: This is for the icing.
- Oat milk: My favorite brand is Oatly! All their products are free of the top 8 allergens.

Easy Gluten-Free Christmas Morning Monkey Bread
Ingredients
- 1 package cinnamon churro Brazi Bites
- 3 tbsp melted butter
- ¼ cup brown sugar
- 2 tsp cinnamon
- 1 tsp nutmeg
- ½ cup powdered sugar
- 2 tbsp oat milk
Instructions
- Preheat oven to 375° F.
- Let Brazi Bites defrost at room temperature for 10-15 minutes or until soft
- Combine melted, butter, sugar, cinnamon, and nutmeg in a bowl. Stir until fully combined.
- Spray small baking dish with nonstick cooking spray.
- Fill dish with Brazi Bites. Push them together in the dish, so there are few gaps.
- Pour melted butter mixture over Brazi Bites, filling in any gaps and fully coating bites.
- Bake for 45-50 minutes or until bites are fork tender.
- Let cool completely before removing from baking dish. You may need to place dish in the fridge for 5 minutes for monkey bread to set completely.
- Make icing by mixing together powdered sugar and oat milk until smooth.
- Remove monkey bread from baking dish, and drizzle with icing before serving.
