Gluten-Free Valentine's Day Cookie Bars

Ingredients

  • 1 package gluten-free chocolate chunk cookie dough
  • 1 cup dark chocolate chips
  • 2 tbsp coconut oil
  • ¼ cup Valentine's Day sprinkles

Instructions

  • Preheat oven to 325°F.
  • Remove cookie dough from refrigerator, and let sit for 10 minutes at room temperature to soften.
  • Line a square baking dish with parchment paper.
  • Use hands to press cookie dough into the bottom of the dish.
  • Bake for 25 minutes or until golden brown.
  • Remove from oven, and let cool before slicing into square bars
  • Melt chocolate chips and coconut oil in the microwave, stirring until smooth.
  • Dip half of each cookie bar in melted chocolate.
  • Cover with sprinkles, and let chocolate cool before serving.
