Preheat oven to 325°F.
Remove cookie dough from refrigerator, and let sit for 10 minutes at room temperature to soften.
Line a square baking dish with parchment paper.
Use hands to press cookie dough into the bottom of the dish.
Bake for 25 minutes or until golden brown.
Remove from oven, and let cool before slicing into square bars
Melt chocolate chips and coconut oil in the microwave, stirring until smooth.
Dip half of each cookie bar in melted chocolate.
Cover with sprinkles, and let chocolate cool before serving.
