These gluten-free Valentine’s Day cookie bars are the perfect treat to celebrate the fun February holiday! Not only are they gluten-free, but they’re also vegan, nut-free, and top 8 allergen free. They’re perfect for any food allergy family, and they only need FOUR ingredients! The ingredients I used are listed below, but feel free to substitute with brands that work for you/your family. All you need is gluten-free cookie dough, chocolate chips, coconut oil, and your choice of Valentine’s Day sprinkles.
What You Need to Make Gluten-Free Valentine’s Day Cookie Bars
- Cookie dough: My all-time favorite allergy-friendly cookie dough is from the brand Sweet Lorens. Their vegan, gluten-free, and nut-free cookie dough comes in four different flavors, but the chocolate chunk is my favorite and made the perfect base for these bars!
- Dark chocolate chips: I love using Guittard chocolate chips in my recipes because all their chocolate is nut-free! Another great option are the dark chocolate chips from Enjoy Life Foods, which are free of the top 14 allergens.
- Coconut oil: This is option, but it helps make the melted chocolate smoother and allows it to coat the bars more evenly. You can use any brand of coconut oil that you prefer.
- Valentine’s Day sprinkles: I used red, white, and pink sprinkles that I found in the holiday section at Target.
How to Make Gluten-Free Valentine’s Day Cookie Bars
- Let cookie dough soften to room temperature. This makes it easier to mold the cookie dough into bars.
- Line an 8×8 inch or square baking dish with parchment paper. I like using the thicker parchment paper sheets from Amazon and trimming them a little to fit the pan!
- Press cookie down into the bottom of the pan. You want your dough to be about 1-1.5 inches thicker, as it will rise while baking.
- While cookie bars are baking, microwave dark chocolate chips and coconut oil in a small bowl. Microwave on increments of 30 seconds, stirring together until fully melted.
- Once cookie bars have baked, remove them from the oven, and let cool COMPLETELY. Once the bars are at room temperature, slice them into nine squares, and remove them from the pan.
- Dip each bar half-way in melted dark chocolate and cover in sprinkles. Let cool for about 15 minutes, so the chocolate and sprinkles can set!

Gluten-Free Valentine’s Day Cookie Bars
Servings: 9 bars
Ingredients
- 1 package gluten-free chocolate chunk cookie dough
- 1 cup dark chocolate chips
- 2 tbsp coconut oil
- ¼ cup Valentine's Day sprinkles
Instructions
- Preheat oven to 325°F.
- Remove cookie dough from refrigerator, and let sit for 10 minutes at room temperature to soften.
- Line a square baking dish with parchment paper.
- Use hands to press cookie dough into the bottom of the dish.
- Bake for 25 minutes or until golden brown.
- Remove from oven, and let cool before slicing into square bars
- Melt chocolate chips and coconut oil in the microwave, stirring until smooth.
- Dip half of each cookie bar in melted chocolate.
- Cover with sprinkles, and let chocolate cool before serving.
