To make gingerbread- flavored waffles, all you need is your favorite allergy-friendly waffle, some spices, and a tablespoon of molasses. Just whip up the batter, spray your waffle iron with non-stick cooking spray, and your holiday-inspired breakfast will be ready in minutes! I have also tried this recipe using a large waffle iron, and it worked great! Just make sure to double the ingredients below if you want to make larger waffles. Whether they’re big or small, these waffles are guaranteed to be a hit!
What You Need to Make Healthy Gluten-Free Gingerbread Toaster Waffles
- Gluten-free waffle mix: My all-time favorite waffle mix is by the brand Josie’s Best Gluten-Free. It’s gluten-free, vegan, and made in a dedicated facility free of the top 8 allergens.
- Cinnamon: Add extra if you like! I usually sprinkle my waffles with extra cinnamon after drizzling them in syrup!
- Ginger: This gives the waffles the best taste.
- Nutmeg: Optional, but this helps give the waffles are more seasonal flavor.
- Eggs
- Dairy-free milk: I love using oat milk when baking. My two favorite brands are Oatly and Chobani! I like Oatly for baking because it is a very smooth non-dairy milk.
- Coconut oil: Make sure it’s completely melted before mixing in with the batter. I usually microwave for two intervals of 20 seconds.
- Molasses: Any brand will work in this recipe, but I love using this one!

Healthy Gluten-Free Gingerbread Toaster Waffles
Ingredients
- 1 cup gluten-free waffle mix
- ½ tsp cinnamon
- ¼ tsp ginger
- ¼ tsp nutmeg
- 2 eggs
- ½ cup dairy-free milk
- 3 tbsp melted coconut oil
- 1 tbsp molasses
Instructions
- Mix together all dry ingredients.
- Create a well in the center of the mix, add wet ingredients, and mix until well combined. Batter should be relatively thin.
- Spray mini waffle iron with non-stick cooking spray and when ready, ladle in 3 tbsp of waffle batter.
- Cook for two minutes or until waffle iron directs.
- Remove from waffle iron, and let cool. Sprinkle with powdered sugar before serving.
