These gluten-free mac and cheese bites are the perfect appetizer for any occasion! They’re extremely easy to make and need less than 7 ingredients. The secret ingredient to making easy mac and cheese bites is using Brazi Bites Brazilian cheese bread. It’s delicious and made in a dedicated facility free of gluten and nuts! To make this recipe, all you have to do is bake the cheese bread, press a teaspoon into the top to make a small hole, make your gluten-free macaroni and cheese, and spoon it into the bread. It’s a super easy recipe, and it makes the mac and cheese in the bites super creamy!
What You Need to Make Gluten-Free Mac & Cheese Bites
- Brazi Bites cheese bread: I like using the Brazi Bites cheddar and parmesan flavor for this recipe. You can use any flavor of Brazi Bites that you like: they also have garlic asiago and three cheese pizza!
- Gluten-free pasta: You can use whatever pasta you like! A couple of my favorite gluten-free pastas are Eat Banza, Barilla, and Ancient Harvest. I used elbows in this recipe, but feel free to change up the shape to what ever you prefer.
- Butter: Any butter you like will work! I do recommend using salted butter for optimal taste.
- Cheddar cheese: You can change up the cheeses to whichever you prefer, but I like using cheddar and parmesan to match the flavor of the Brazi Bites.
- Parmesan cheese: Grated or shredded both work in the recipe.
- Salt: Make sure to salt the pasta water before putting your gluten-free pasta into the pot. I also always add salt to the finished mac & cheese to taste!
- Pepper: I like mixing in pepper to the mac & cheese and also adding it to the top of the mac & cheese bites before serving!

Easy Gluten-Free Mac & Cheese Bites
Ingredients
- 1 package Brazi Bites brazilian cheese bread
- 1½ cups your choice dry gluten-free pasta
- 2 tbsp butter
- 1 cup shredded cheddar cheese
- ½ cup grated parmesan cheese
- ½ tsp salt
- ½ tsp pepper
Instructions
- Preheat oven to 400°F.
- Remove Brazi Bites from freezer, arrange 1 inch apart on a baking sheet, and bake for 20 minutes.
- While Brazi Bites are baking, boil water in a medium pot for pasta.
- After water has boiled, add gluten-free pasta, and cook for 7-9 minutes. Time will vary depending on your choice of pasta.
- Once cooked, drain pasta water. Keep pasta in the pot, so it remains hot, and add in butter, cheddar cheese, and parmesan cheese. Stir to combine. Season with salt and pepper to taste.
- After Brazi Bites cheese bread has baked, remove them from the oven. While still hot, use a teaspoon to press a hole into the top of the cheese bread.
- Fill with 1 teaspoon of mac and cheese. Top with cracked pepper before serving.
